Coastal Summer Shrimp Pasta

4-6 Serving

Ingredients

1 lb. linguine or spaghetti

1½ lbs. shrimp, peeled & deveined

1 tsp Old Bay seasoning

4 tbsp butter

2 tbsp olive oil

4 cloves garlic, minced

1 pint cherry tomatoes

1½ cups corn

Juice of 1 lemon

½ cup heavy cream (optional)

¾ cup parmesan

Salt, pepper & parsley

Instructions

  1. Cook pasta until al dente. Reserve 1 cup pasta water.

  2. Season shrimp with Old Bay, salt, and pepper.
    Sauté in olive oil 2 minutes per side. Remove.

  3. In the same skillet, melt butter. Add garlic, tomatoes, and corn.
    Cook until tomatoes blister.

  4. Stir in: lemon juice, heavy cream, parmesan

  5. Toss in pasta and a splash of pasta water until silky.

  6. Return shrimp to skillet. Top with parsley and extra parmesan.

Serve warm with lemon wedges and garlic bread.

Coastal Peach Cream Parfaits

4 Servings

Ingredients

2 fresh peaches, diced

1 cup whipped cream or whipped topping

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

1 cup crushed vanilla wafers or graham crackers

1 tbsp honey

Fresh strawberries (optional)

Mint leaves for garnish

Instructions

  1. In a bowl, mix: cream cheese, powdered sugar, and vanilla

  2. Fold in whipped cream until smooth and fluffy.

  3. In serving glasses, layer: cookie crumbs, cream

    mixture peaches, and repeat layers.

  4. Drizzle with honey, chill 30 minutes.

Top with strawberries and mint before serving.

Add:

Toasted coconut, lemon zest, or crushed pecans

Ingredients

2 cups sparkling water

1 cup white cranberry juice

Juice of 2 lemons

Juice of 1 orange

1–2 tbsp honey or simple syrup

Ice

Mint, lemon & orange slices for garnish

Instructions

  1. Fill a pitcher with ice.

  2. Add cranberry juice, lemon juice, orange juice, and honey.

  3. Stir well.

  4. Top with sparkling water.

  5. Garnish with mint and citrus slices.

Serve cold.
