Coastal Summer Shrimp Pasta
4-6 Serving
Ingredients
1 lb. linguine or spaghetti
1½ lbs. shrimp, peeled & deveined
1 tsp Old Bay seasoning
4 tbsp butter
2 tbsp olive oil
4 cloves garlic, minced
1 pint cherry tomatoes
1½ cups corn
Juice of 1 lemon
½ cup heavy cream (optional)
¾ cup parmesan
Salt, pepper & parsley
Instructions
Cook pasta until al dente. Reserve 1 cup pasta water.
Season shrimp with Old Bay, salt, and pepper.
Sauté in olive oil 2 minutes per side. Remove.In the same skillet, melt butter. Add garlic, tomatoes, and corn.
Cook until tomatoes blister.Stir in: lemon juice, heavy cream, parmesan
Toss in pasta and a splash of pasta water until silky.
Return shrimp to skillet. Top with parsley and extra parmesan.
Serve warm with lemon wedges and garlic bread.

Coastal Peach Cream Parfaits
4 Servings
Ingredients
2 fresh peaches, diced
1 cup whipped cream or whipped topping
8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
1 cup crushed vanilla wafers or graham crackers
1 tbsp honey
Fresh strawberries (optional)
Mint leaves for garnish
Instructions
In a bowl, mix: cream cheese, powdered sugar, and vanilla
Fold in whipped cream until smooth and fluffy.
In serving glasses, layer: cookie crumbs, cream
mixture peaches, and repeat layers.
Drizzle with honey, chill 30 minutes.
Top with strawberries and mint before serving.

Ingredients
2 cups sparkling water
1 cup white cranberry juice
Juice of 2 lemons
Juice of 1 orange
1–2 tbsp honey or simple syrup
Ice
Mint, lemon & orange slices for garnish
Instructions
Fill a pitcher with ice.
Add cranberry juice, lemon juice, orange juice, and honey.
Stir well.
Top with sparkling water.
Garnish with mint and citrus slices.
Serve cold.
